How to Live Free of Chronic Diseases
Many years ago, I was taking nutrition courses at the Alternative Medicine College of Canada in Montreal and I learned about Dr. Weston Price. He conducted the first modern research about the health and eating habits of isolated traditional societies - living entirely on local foods (more about Dr. Weston Price and his food philosophy at www.westonaprice.org).
While the diets of those societies were different in many particulars, they contained several factors in common, such as their food preparation techniques and the use of bone broth. Dr. Price found and analyzed fourteen groups – they were all free of chronic diseases. I strongly believe that the food choices and preparation techniques of healthy, non-industrialized people should serve as the model for contemporary eating habits. Therefore, I am implementing those techniques into my cooking practice and primarily creating handcrafted bone broth based soups.
